Such an easy, delicious recipe. And it has been a no fail for me every time! I love making these around the holidays! Definitely a 5 star recipe. Thanks for sharing.

I doubled the recipe and loved the outcome. I might lower the time in the oven but really they turned out great. I made another batch with pumpkin pie spice instead of cinnamon and it also worked out really well. I did accidentally double the amount of sugar but it still works out and all the excess falls off the nuts when mixing them in the oven.

OMG so freaking good. The only thing I did differently was instead of water to the egg white mixture I put in vanilla extract. This is so good. I can see myself giving this away to family and friends during the holidays. I will definitely keep a batch for myself. Thank you thank you for such a wonderful recipe!

These turned out so yummy. I used pecan pieces instead of halves to put on top of whip cream that I topped my sweet potato pie with. Just what I was looking for.

What quantity of pecans do you use?

    • Ashlyn Edwards Reply

      It’s 2 1/4 cups pecan halves.

  12. Jessica Reply

Absolutely wonderful! So crunchy and wonderful! I used vanilla extract instead of water, but everything else I did the exact way of the recipe. They were perfect!

Can the air fryer be used instead of the oven?

    • Ashlyn Edwards Reply

I haven’t tried these in the air fryer before, so I can’t attest to how they would turn out (or the temp/time ratio.) If you give it a shot, let me know how it turns out!

I literally can’t keep my hands out the pecan jar lol. So easy and good. Keeping this in my collection.

FAQs

Why do you soak pecans before roasting? ›

Wet pecans allow the salt to stick easily to the nuts. Plus, soaking nuts helps neutralize enzyme inhibitors, which can harm your digestion, and reduce phytates, which decrease nutrient absorption. Just submerge your nuts in water while the oven is heating up and you'll be good to go.

Why are my candied pecans soggy? ›

Why are my candied pecans soft and sticky? If your pecans are soft, it's most likely because they weren't baked long enough and are still retaining moisture. The sugar needs to bake long enough to caramelize and form a brittle coating on the nuts.

Should you roast pecans before baking? ›

Pecans are typically added to a recipe for added texture and flavor and toasting them will only improve both qualities. Toasting pecans (or any nut for that matter) not only makes them extra crisp and crunchy, but you'll get an even greater boost of nuttiness and flavor.

Are cinnamon pecans good for you? ›

Pecans also contain significant amounts of vitamins and minerals, including vitamin E, vitamin A, zinc and magnesium. Not to mention that these maple cinnamon pecans are free from refined sugar and naturally sweetened with real maple syrup, making this the perfect healthy snack.

Why do you boil pecans before cracking? ›

Boiling pecans before cracking them can actually help prevent the shell from shattering.

How to remove bitterness from pecans? ›

Some of the tannin and all of the corky material can be removed by washing the kernels before cooking. To "sweeten" the pecan meats (kernels), simply put the pecan kernels in a bowl and fill with lukewarm water. Stir and tumble the meats in the water for several minutes and you will see the discoloration in the water.

How to make candied pecans less sticky? ›

Salt: 1/2 teaspoon of fine sea salt makes these taste salty-sweet. If you'd prefer to not taste the salt, reduce to 1/4 teaspoon of salt. Pecans too sticky: If your nuts are still sticky after cooling, heat your oven to 325°F (162°C) and bake for 5 to 10 minutes to help harden the candy coating.

How long to soak pecans before eating? ›

Preparation:
  1. Place the pecans and salt in a large glass or stainless steel bowl along with 8 cups of water. The pecans will swell during the soaking process, so you want enough water to keep them covered.
  2. Leave them on the counter to soak for 4-8 hours. ...
  3. After they are done soaking, drain and rinse in a colander.

Why are my pecans rubbery? ›

Humidity above these values can cause kernel molding and pecan texture deterioration (pecans become soft and rubber-like), whereas lower humidities will cause excessive drying. In-shell pecan kernels will darken under high humidity as a result of the tannic acid being dissolved from the shell lining.

What is the difference between roasted and toasted pecans? ›

Now, some of you may be wondering, “What's the difference between roasting and toasting a pecan?”. The answer is simple. Roasting is when the nut is cooked fully through, and is usually done in an oven. Toasting means to brown the nut on the outside, and is usually done over a fire or on the stove.

How long to toast pecans at 350 degrees? ›

How long should pecans soak in water? ›

Leave them on the counter to soak for 4-8 hours. Loosely cover with a clean cloth, this allows the contents of the bowl to breathe. If you think that it will be longer than 8 hours before you can get to them, place the bowl in the fridge, making sure to change the water every so often.
